Crispy Peanut Butter Treats

Did I mention that I am a peanut-butter-aholic too?  I love practically anything with a peanut butter flavor.

These treats are from Alicia Silverstone’s The Kind Diet and are amazing.  I took them to a meeting today and everyone loved them!

Who doesn't like Rice Crispy Treats?

1 box brown rice crisps cereal

1 ¾ C brown rice syrup

¾ C peanut butter (preferably unsweetened and unsalted)

½ C grain sweetened chocolate chips (optional)

Pour the rice cereal into a large bowl.  Heat the syrup with a pinch of salt in a saucepan over low heat.  When the rice syrup liquefies, add the peanut butter and stir until well combined.  Pour over the price cereal.  Mix well with a wooden spoon.

Once thoroughly mixed and cooled to room temperature, stir in the chocolate chips (if using).  Make sure the mixture is cool, or you will end up with melted chocolate instead of chocolate chips.

Turn the mixture into an 8” x 8” or 9” x 13” baking dish.  Wet your spoon slightly and press the mixture evenly into the pan.  Let cool for 1 hour before cutting into squares.

Alicia’s suggestions for eating (as if you need any!):  Parties, after-school snacks or as a regular dessert.  She makes a batch and takes them with her when traveling – she says they are perfect for when she’s running late, have skipped a meal, or she just wants a dessert that won’t bring her down.

YUM!! These DO sound amazing, and perfect for gluten-free people too. How did we not discover that we’re both peanut butter-aholics during our conversation?! Because yeah… totally am.
